          Chicken Fettucini Alfredo &lt;br /&gt;&lt;br /&gt;1 medium onion diced&lt;br /&gt;&lt;br /&gt;2 or 3 cloves of garlic&lt;br /&gt;&lt;br /&gt;1/2 pound butter&lt;br /&gt;&lt;br /&gt;1-1/4 cup whipping cream&lt;br /&gt;&lt;br /&gt;1 cup chicken, cooked and diced&lt;br /&gt;&lt;br /&gt;1 cup fresh grated parmesan cheese&lt;br /&gt;&lt;br /&gt;1 pound cooked fettucini noodles&lt;br /&gt;&lt;br /&gt;Saute onion and garlic in butter until soft. Add whipping cream bring to gentle boil for 2 minutes. Lightly sprinkle with garlic powder on both sides while toasting until golden brown and the cheese is melted. (about 3 - 4 minutes on each side) Serve with warmed pizza sauce for dipping. They are 15, 14, 11, 8 and 6 years old... I have been homeschooling them since the 2003-2004 school year... However this last school year (2007-2008 ) I talked to my husband and told him that I thought we should send them to a private school... Because our oldest was starting high school and I wasn't sure I would be able to provide her with the education that she needed... My husband, (Keith) disagreed with my about this... But, told me that he would support whatever decision I made... So, I enrolled the kids in a private Christian school in our little town... We are a Catholic family but, there is not a Catholic school that is K-12  in our area... So, I thought this would be a good choice... Right after the school year started, things started going wrong... The Principal of the school was absolutely the most unprofessional person I have ever dealt with... I was told personal thing about other families, as I am sure the other families were told personal things about my family, by the principal... The principal hired under qualified and/or unqualified  people for teaching positions... She did this in trade for tuition... There was one woman in particular that worked at the school in trade for tuition for her kids that had no business working around ANYONES kids... She treated them terrible based on her mood of the day... I heard her on more than one occasion say that, so and so was getting an F for this project for the day or this week because they had pissed her off or looked at her wrong or talked over her... She cussed in the school building, as well as the principal did... But, I had signed a contract and had to make it through the year... In January, our son Keith was in 2nd Grade... He went Ice Skating with his class for PE... At the end of the day I picked the kids up from school... Our youngest son told me that Keith fell and has a big bump on his head... When I got him from his class, I saw this huge lump (the size of an egg) on his left temple... He didn't remember what happened and he said it didn't hurt so, we went home and I just watched him for awhile... About 4pm he started falling over, stuttering when he talked, not being able to remember things and his forehead started swelling... I took him to the doctor and the confirmed that he had serious concussion and the reason that his forehead was swelling was because he was bleeding between his skull and skin... Well, it has been almost 7 months since this happened and he is still having effects from this fall... The thing that was so unbelievable about this whole thing was, nobody from the school called my husband or myself or any of our emergency contacts... They told us that they didn't think it was that big of a deal... Our son has been going to a reading tutor program to regain skills he lost from the concussion, for the last 4 months... I know that accidents happen and that this could have happened if he had been with me or with my husband... But, if it had happened and he had been taken to the ER right away some of the problems may have been avoided...&lt;br /&gt;&lt;br /&gt;As of May 16th we are free of that school and the back biting that went along with it... My husband was right all along... I should have listened to him and believed in my abilities...
